Oh nice, yeah he does trade it for a bishop

The sequence is

1. E4 , H5 2. Nc3 , RH6 3. Bh6 , Nh6

No I am aware he can just play without a Rook which is fine, all I am saying is if you take it every time and lose. See what happens if you don't take the trade instantly. Don't let the fact that a Rook is worth 5 and a bishop is worth 3 fool you. He wants you to take the Rook and you know it. Just go ahead and move a pawn forward to mess up the move he does. I need to look at this on a chess board to see what it would look like, just move to be ahead of his moves. That's what makes a chess player a good chess player.
Psychology, the way to win Toribash games.

Your notation seems a little off, do you mean:

1. E4 A5 2. Nc3 Ra6 3. Bxa6 Nxa6

If it's the case, I'll fathom a guess and say he plays hypermodern, so he wants you to occupy the center of the board and then undermine your defenses. If I were in your boat, I'd respond with Nge2 to open up the king side castle while reinforcing your center. Follow it up with D3 or B3, D3 to reinforce the center and open the bishop up, B3 to fianchetto your remaining bishop. Castle when necessary. He's going to try to put pressure on your white squares due to the bishop advantage, so knights on black limits his options to undermine your defense with his advantage.

I'd also guess that if you open up with D4 instead of E4 he'd respond with H5, if he's adamant in offering the rook for bishop trade. If he does do so, it might be better overall to start with Queen's pawn instead of King's pawn since the trade deprives him of the easier castle and forces him to develop his queen somewhat to castle. It also makes your castle delayed, but you're technically more developed than he is due to the opening, so it might be worth while. It does mean he gets black advantage instead of white advantage with the trade, so a castle is riskier anyways if it's a Queen's pawn opening into rook trade.

I can't say anymore beyond that, since it'd be hard to dissect his midgame without seeing multiple matches.

Yup, he's performing a gambit. What you need to work on is how you respond to opening plays. Your choice to develop king side knight (3. Nxa3 Nf6) was probably not the best decision, as rushing for the early castle doesn't accomplish much for you, and it doesn't make it much harder for him to attack you one way or another. Furthermore, that knight doesn't reinforce your defense, nor does it convey any sort of offense. It leaves your king's pawn unprotected, and only attacks an obviously terrible move from white to respond with king's pawn, which even a remotely competent novice wouldn't do in response. It lets him take the initiative again when he offers up his queen's pawn, since it removes your development of the center if you take it, and lets him develop in response regardless if you do take it with either his bishop starting a pin, or just taking your pawn for the trade with his queen. Either way, it gives up your defense of the center. Nf6 was his foothold back into control.

I see - sharing another game I played. This one was quite clean in comparison, although i won I was on the defensive pretty much the whole game. Not surprising given I was black and it ended up being quite even but I cant see (m)any opportunities for me to take the offensive:
