I just say "Gg.That was fun".The winking face is kind of annoying if it's being done onto you,but I have to admit,doing the winking face or being a smart-ass relieves a little bit of stress.

I generally say GG if I lose regardless.
If I win and it was genuinely a good game I say GG first. If not, I say nothing. Sometimes I chat with the winner/loser too. No real point to not be friendly. If you lose then they're either better than you or you derped and vice versa.
