I think that just because it's downtempo doesn't mean it's trip-hop automatically. I think Eple is progressive house, just... slow.

Trip hop, in my opinion, is usually even slower than Eple, which was actually quite upbeat, and is driven by repetition. And while, at first glance, Eple definitely sounds repetitious because of its mainline synth, it does show signs of progression with choruses, refrains and verses.

I understand "humble" doesn't translate well over text, let alone the internet, with its certain anonymity. So I really just want to make it clear I'm not trying to prove you wrong or anything.

Well I know that, even though downtempo is usually seen side-by-side with trip hop. And trip hop is a dynamic genre. I usually perceive trip hop that way. I am myself a listener of dowtempo, chill-out, acid jazz, and and new age music.

And Eple's breakbeat is definitely "trip-hopish". That drum machine being used doesn't fool me. And thats one of the most prominent features of Trip hop music (but not restricted to, of course)...
And of course you can still identify the blending of other genres. Trip hop itself was created out of a blend of many different genres. Sometimes its influences are pretty obvious.

Wikipedia has a pretty good article on trip-hop, IMO. But there are other good sources of information as well.
