You can upload an image to the flame particle item and that will be the flame, you can change the amount size and stuff like that, im pretty sure you can change the hue as well...

So each particle of a flame has a texture, and the flame particle texture allows you to edit that. By default the texture is a white circle surrounded by black, black is invisible and white is the original color of the flame. So technically you change the shape and color but since white is transparency and black is invisible there are some limitations.
