Rats/Mice until all of our rubbish was gone. Then there wouldn't be a dominant species, since humans are the only species that really "dominates". It would just go back to the food chain.

Another interesting thing is the fact that billions and billions of livestock would die since there wouldn't be any food for them to eat.

Depends on what happens to the earth. If humans were forced to leave for example by a nuclear war the dominant species would probably be cockroaches.
