Yes sure, any visual attractive replays are fine, I think.

Unfortunately, it's like only about 1k match frames long and there's 500 match frames that just show the ending pose. Is it still okay?

Yes sure, video editing can do lots of things, like editing out 500 frames of pose.

I made a new, shorter one with 800 match frames. Sadly all it is is just me expecting Uke's attempted assassination and knocking him out at the end with some sweep-ish kick. He just attacks less then five times.

As I said, I can do the art of the video. I wouldn't edit it, I would do the art. Banners, logotypes, usercards and these things.
Also, we can request from a video maker. Like...Muffindo, Moop etc.

Dude, just post your replays when they find a vid maker. You know, awesome editing sometimes make decent replays look epic. Oh, and don't worry about the frames, they'll cut out the empty parts of the replays.
