Gripping before impact may make dismembering a lot easier but it also makes your replay look less impressive, that's why, when you say that "pro's do it" I think you're actually referring to stuff like total dismemberment replays, not usual "pro" replays. You'll find that grabbing is one of the major criticism of noob replays, along with stiffness.

Check frame 423, type "/opt uke 0" and shift "p". You'll see that he switched to grab there and ungrabbed when inside to increase the volume of the hand inside Uke. Somehow Uke can't stand having body parts in him ;).

Hydrotoxin: Too stiff, kick looked weak and you only just got Uke's head. If you're going to make a decap replay then make it special, otherwise it's just like the rest.
