I'd like to cut out most of the mods that come with the download, so I don't have to scroll around so much to find what I want. How can I do that? And while I'm asking, how do I delete replays?

Find the directory with the Toribash folder and click on Data > Mods and you'll find all the mods. For replays, go back and click the Replays folder.
