Win8 in the SSD, Ubuntu on HDD2.

But (With my limited knowledge) won't your CPU be bottlenecked by the GPU? That's a very powerful GPU...

To bottleneck your CPU you require to have a pretty bad one to start with. It's rare that you get bottlenecks for anything with more than 3-4 GHz
